as you already know there are several differences in the feature set of the different OS SKUs (Datacenter, Enterprise, Standard, Standalone..). Here you can find a comprehensive overview for all current Hyper-V R2 editions :
In general Hyper-V 2008 R2 server is a good starting point and again it is unbelievable but it is for free. The capabilities of clustering, live migration, cluster shared volume… are also already in Hyper-V R2 server included.
